Cheese Almond Cookies 芝士杏仁饼 CNY 2016

又到了家家户户都忙制作年饼的季节了!
第一款年饼~ 芝士杏仁饼,充满浓郁的芝士和杏仁香味,试吃第一口就爱上它了。
How time flies...It's time for preparing cny cookies again! Parmesan cheese and almond are such a winning combination. I'm addicted after my first bite :)
Cheese Almond Cookies
Ingredients:

100g butter (at room temperature)
40g icing sugar
1 egg yolk
50g grated parmesan cheese
120g plain flour, 1/4tsp baking powder (sifted)

1 yolk for glazing, some sliced almond for deco

Method:
  1. Beat butter with icing sugar until light and fluffy.
  2. Add in egg yolk in 2 batches, mix well.
  3. Add in grated parmesan cheese. Mix well.
  4. Slowly add in flour, mix mixtures to a soft dough.
  5. Pre-heat oven to 170C. (mine at 180C)
  6. Take a little dough (about 7g each) and roll them into small balls.
  7. Place on the baking tray with baking paper.
  8. Brush each ball with beaten egg, coat with some sliced almond.
  9. Bake cookies for 15-18 minutes or until light golden brown.
