Pandan Cotton Cake 香兰棉花蛋糕

唉~ 想烤一个没有“爆脸“的棉花蛋糕,还真不容易呀!佩服那些已经成功了的朋友。
已经是第三次烤这款蛋糕了,还是没办法拿捏好烤箱的温度。呜~只好再接再厉咯!
话说回来,棉花蛋糕轻柔湿润,口感细密,一吃就会爱上它了。
This was my third attempt to cotton cake but I still failed to bake a perfect one without crack on top. I feel frustrated but baker won't easily discourage, am I right? There's more to come ya...lol
However this cotton cake texture is super light, moist and fluffy. Once you try it, you will love it.

Pandan Cotton Cake 香兰棉花蛋糕
Makes : 6" removable bottom round pan  

40g Corn oil
50g Cake flour
3 Egg yolks
1 Whole egg
25g Homemade pandan paste
25g Coconut milk

3 Egg whites
40g Sugar
  • Heat up corn oil in a small sauce pan over low heat until lines appear (or soft boil), turn off heat. 
  • Add in sifted cake flour into (1) while it still hot, mix until smooth (no lumps). 
  • Lightly whisk egg yolks and whole egg.
  • Add in egg mixture to batter, pour in coconut milk and pandan paste, whisk until ribbon stage. Set aside.
  • Beat egg whites till foamy, add in sugar gradually, beat until soft peak.
  • Add in 1/3 of the egg white batter into the egg yolk mixture, mix well.
  • Fold in the remaining egg white batter till just incorporated, do not overmix
  • Pour batter into pan and tap the pan to release big air bubbles.
  • Bake using "steam bake" method at preheated oven of 180C for 10 mins, 150C for 50 mins.
  • Remove cake pan from oven and immediately drop the pan from a height of 10cm onto the table topInvert to cool down completely before unmoulding.

  2. 蛋糕组织很漂亮也,底火控制好,蛋糕表面就不会裂。
    我也是做了这个口味,还没有分享。。。呵呵!
