Palm Sugar Jelly/Agar Agar Gula Melaka 椰糖椰汁燕菜

Palm Sugar Jelly/Agar Agar Gula Melaka 椰糖椰糖椰汁燕菜

550g Water
3 tsp Agar-agar powder
130g Gula melaka/palm sugar, roughly chopped
3 Pandan leaves tied into a knot

250g Coconut Milk
Pinch of salt
  • 1. Put water, palm sugar, agar-agar powder and pandan leaves into a pan. Boil over a lower heat until palm sugar dissolves. Discard pandan leaves.
  • Stir the salt into the coconut milk and pour it into jelly mixture. Bring it up to a boil and turn off the heat immediately. 
  • Pour the jelly into a jelly mould and leave undisturbed until set. When cool, chill the jelly in the refrigerator. The jelly should separate nicely into 2 layers-a clear palm sugar layers and a coconut layer. Remove from mould, cut and serve cold.
