Cranberry Financiers 蔓越莓费南雪

周末不想把自己搞的太劳累,所以选择了这款法式小蛋糕,制作轻松不费时间,也是下午茶理想甜品!这小蛋糕无论是当天吃或放將蛋糕密封後隔天再吃口感一样會濕潤綿柔。还有香香的杏仁味,我好爱呷!

Something fuss less and light make a happy weekend!
Cranberry Financiers 蔓越莓费南雪

Ingredients

55g Maple sugar (I use 45g brown sugar)

40g Icing sugar (I use 30g)
30g Almond powder (I use 35g almond)
5g Hazelnut powder toasted (I don't use this)
40g Bread flour
1g Baking soda
100g Egg white
5g Invert sugar (I don't use this)
65 Buerre noisette (brown butter)
50g Dried cranberries

Method
  1. Prepare buerre noisette by melting butter in a heavy saucepan over medium flame until a tan hue. (How to make brown butter-youtube)
  2. Toast ground hazelnut at 160c for 5-6 min (I skip this)
  3. Preheat over at 200C
  4. Dice dried cranberries. Sift bread flour and baking soda.
  5. Mix hazelnut powder, almond powder and maple sugar followed by flour mixture.
  6. Ad half the egg whites and mix. Add invert sugar and finally rest of egg whites in 2 additions.
  7. Add buerrer noisette and diced cranberries.
  8. Fill piping bag with batter mixture. (I use spoon to Pipe into financier mould until 80% full.
  9. Lower over temperature to 190c and bake for 7 min. (I bake 20 min)
  10. Remove from mould and cool before serving.
