Light Cheesecake 轻软芝士蛋糕

和重乳酪蛋糕比起来,轻乳酪蛋糕更让我迷恋。
迷恋它的典雅大方,口感綿柔清爽。。。

这个蛋糕看似温柔,但其实很会“欺负”人!
总之从入烤箱到出烤箱,你都要温柔对待它。
不然它就会“脸皱皱”的给你颜色看。我的皱皱蛋糕就是最好的例子,嘻嘻! (苦中作乐)

Light Cheesecake 轻软芝士蛋糕
(Recipe source adapted from : Crystal@厨房找快乐

Makes : 1 x 8" round cake

A. 60g milk, 120g cream cheese,  30g butter
B. 20g cake flour, 20 corn flour, 4 egg yolks
C. 4 egg whites, 60g sugar, 1/8 tsp tartar 

Method:
  1. Heat up A in a saucepan (low heat). Stir constantly using a hand whisk until all melted and no lumps. Set aside.
  2. Add in egg yolks to the cheese mixute, then sifted in flour, mixed well.
  3. Beat egg whites with tartar powder, add in sugar gradually, beat until soft peak.
  4. Fold in the egg whites mixture (in 3 batches) until well combined.
  5. Pour mixture into lined cake pan. Place the cake pan in another pan containing hot water or can use steam bake method. ( I use water bath method - 水浴法) 
  6. Bake at 150c for 40 mins. (I bake at 160C for 1 hour).
My note:
To prevent from shrinking: open the oven door ajar for 10 minutes or so, and let your cheesecake cool down gradually. (don't keep too long it will affect the moist of the cake).
