Purple Sweet Potato Ondeh-ondeh (紫薯椰丝糯米球)

我不太擅长做娘惹糕点,尤其是那些需要蒸的糕点,时常都失败收场。相比之下,紫薯椰丝糯米球算是比较容易制作的糕点! 好喜欢它QQ的外皮,还有那爆浆的椰糖内馅~太棒了!
其实那天在Jessie家看到紫薯Ondeh-ondeh时早已心动了。不过且拖到今天才有机会做。

最近身体不太好,伤风,感冒和咳嗽都快一个星期了,都没完全康复。医生也说近来流行性感冒。所以希望大家好好照顾身体,避免到人潮拥挤的地方。

I am not good in making Nyonya kuih, especially those need to be steamed. No matter how hard I tried, it always end up with undesirable result. Unlike other steam kuih, ondeh-ondeh is consider rather easy to master. I like its QQ/springy texture and the taste of the gula melaka melt in your mouth. 
I was so tempted to try this Ondeh-ondeh after reading Jessie posting. Nevertheless, it was delayed until today. 

Recently, I was down with flu and cough for almost a week. Recovery is rather slow and was advised by the doctor to have more rest and avoid crowded places. I wish everyone good health and take care.

Purple Sweet Potato Ondeh-ondeh (紫薯椰丝糯米球)
(Recipe source : adapted from Jessie Cooking Moments, originally from Joceline
Make : 29 Ondeh-ondeh (I made half of this recipe about 14 Ondeh-ondeh)

Skin Ingredients:
150g Mashed sweet potato, sifted
150g Glutinous rice flour
125g Icy cold water
12g Caster sugar

Filling Ingredient:
100g Palm sugar (Gula Melaka)

Coating Ingredients:
100g Sherdded coconut
1/4 tsp Salt
1 Pandan leaf, tied a knot

Method:
  1. Fill up a bowl with room temperature water. Freeze for 30 mins or until further use.
  2. Chop the gula melaka roughly. Place in a stick blender, blitz until resembles fine crumbs, set aside.
  3. Mixed coconut with salt. Steam with pandan leaf until soft. (about 15-20 mins)
  4. To make the dough, mix flour with sweet potato until resembles coarse crumbs. 
  5. Add water, starting with 50ml, knead the dough, add little bit of water at a time & knead until the dough is pliable & not sticky.
  6. Place the dough in a bowl, cover with a clean, wet tea towel to prevent dryness.
  7. Grab a small piece of dough, about 15g & roll into ball. Either flatten it or make it into a small bowl-shape, place some gula melaka inside.
  8. Carefully seal & roll into balls again. Place on a line tray. Cover with cling wrap. Repeat until the dough is all used up.
  9. Remove water from the freezer.
  10. Cook ondeh-ondeh in boiling water until they float up. Do this in small batches. Don't over-crowded the cooking pot. Give a gentle stir to the ondeh ondeh if they stick to the base of the pot for too long.
  11. They should be cooked within a few minutes.
  12. Very quickly remove from hot water & place in the cold water.(Tips for QQ skin)
  13. Remove from the cold water, then coat with coconut before serve.

    Hope you will recover soon. Do avoid deep fried food, chicken especially if cough and by right no coconut too. Well, nevertheless your onde onde looks great as I love onde onde made with sweet potato much more it is purple ones. Take care; and lots of water.

    1. Thank you, Mel. I stopped to take those food you mentioned except coconut,hehe...but I only ate two ondeh-ondeh, I think should be no problem ya :) I lost my appetite after sick and I eat something very light recently :)

  6. i'm not good with steaming too... so that makes the 2 of us... ok... i trust u that this is easy k.... i will try soon..... n u ah.... better get well soon.... sleep n inhale some hot water with sea salt through ur mouth n exhale thru nose... cover ur head with a towel over the pot of boiling Water though.... this is my natural healing method. do hope u get well soon so that i can copy more of your cakes ;)
