Angku Kueh VS Purple Sweet Potato Angku Kueh (红龟粿对垒紫薯龟粿)


我的第一个紫龟粿,竟然就无颜见人!因为太爱那粉紫色了,所以厚着脸皮Post上来。 请大家不要见笑这个没有花纹的龟粿!:)
因为心有不甘,各了一个星期我又再挑战一次。第二次的红龟粿,还勉强有点看头啦!
本人不是很爱吃龟粿。不过,对这个食谱感到满意。粿皮的柔软度适中,不会太粘牙,内馅香软,值得一试!

My first attempt on making Purple Sweet Potato Angku Kueh may not look good with no clear decorative design on top. Nevertheless, since I love its violet theme so much, I post it for my record.
After a week, I challenge myself with the "real" angku kueh. This time it look better even though there is room for improvement. I like this kueh soft texture which is not too sticky and the soft mung bean filling is delicious.

Purple Sweet Potato Angku Kueh 
(Recipe adapted and inspired by Pink Lady of Lucky Inn with minor changes)

Makes : about 24 small size angku kueh

Mung Beans filling
150g  mung beans/green beans
80g sugar
1tsp corn oil

Filling method:
1.   Soak the mung beans at least 2 hours and rinse.
2.   Steam beans for 30 mins (I used high pressure cooker for 15 mins)
3.   While beans still hot, add in sugar and corn oil and blend in food processor till fine.
4.   Shape into 12g small ball.

Purple sweet potato dough
100g purple sweet potatoes (For red angku kueh use yellow or orange sweet potatoes)
1tbsp sugar
130g water
200g Glutinous rice flour
25g cooking oil
Few drops red coloring - for red angku only

*Banana leaf - cut according to the mould size and lightly oiled.

Dough method : 
1.  Steam sweet potatoes for 15 mins. Mashed with fork and set aside to cool.
2.  Mix all the ingredient by hand (except water) in a bowl.
3.  Slowly add in (water + red coloring) and shape into dough. 
4.  Shape into 17g balls. 

Method
1.  Lightly dust the mould with glutinous rice flour.
2.  Flatten the sweet potatoes ball to form a thin skin and wrap with a mung bean ball,
     roll back into ball.
3.  Place the ball in the mould, flatten the ball to form the design.
4.  Knock out and place on the greased banana leaf.
5.  Steam for 5-6 mins (small size mould) over a medium low heat.
6.  When is done, remove from steamer and lightly brush the kueh surface with corn oil.

    I have yet to make my attempt on angku kuih though I really love to eat angku kuih. I have got the mould months ago and I keep delaying making it. Your first attempt already looking so good and perfect.

  16. Esther , I think both kueh look fantastic ! Just love the mungbean filling , it reminds me of the snowy mooncakes that we had last Mid-Autumn . I'm partial to your purple one though lol I'm really tempted to buy that kind of mould :P

    Those dishes that you've had look drool-worthy , the Balinese roasted chicken is to die for ! Yup , I need to stop drooling now ;D

  22. Esther, you know angku kueh is my favourite Nonya kueh. I can eat a few in one go. This restaurant you went to has many branches but with different names like Ole Ole Bali (in Kiara) and Waterlily (Tropicana). I have been to both and I love the food very much!
