Charcoal Burger with Spicy Chicken and Egg (黑炭汉堡)

Indeed, I wish to try MyBurgerLab (Top 5 burger in KL) charcoal burger first before I make this. However, during our 1st visit on Saturday night, the place is already over crowded with long queue. Even though we want to stick to our initial plan, our hungry stomachs are not accommodating. After thought we decided to skip it and look for other alternative.  Our 2nd visit is a week later and this time we choose weekday too avoid crowd. Unfortunately the restaurant was closed for 2 days due to kitchen renovation. Instead of 3rd time lucky our subsequent visit has to be cancelled off as a result of massive traffic jam along federal highway caused by heavy rain and car accident :(

In the end, I decided to make my own charcoal burger, this well known kopitiam milk bun with juicy spicy chicken patty, perfectly fried egg and crispy green lettuce, totally win my heart! Once again thank you for Sonia's sharing.

原本打算去先尝MyBurgerLab 的汉堡后,才开工做这黑炭汉堡。但几经波折后,还是选择先自己动手做,因为要吃这个吉隆坡榜上五大排名的汉堡,还真不容易呀~

话说第一次去这家店是星期六, 那排得长长人龙真是太恐怖了,当时肚子又咕噜咕噜地叫,实在没耐性等下去,结果临时改变计划吃其他的。第二次打算去时,偏偏又遇到店里的厨房小装修,关闭两天。第三次前往途中突然一场倾盆大雨加上车祸,整个联邦大道交通瘫痪,车辆动弹不得,结果又被逼取消。。。

啊!算了吧!我决定不再看天看地的脸色,我自己来搞定这O噜噜的家伙。当然非常感谢Sonia分享这好食谱,我才能如愿以偿!

The next day I had my charcoal buns with pandan kaya that brought from Ipoh by my SIL. It taste great too.
配上大嫂特地从怡保带来的班兰加椰,也不赖哦!

Charcoal Burger with Spicy Chicken and Egg (黑炭汉堡)
(Recipe adapted from Nasi Lemak Lover with minor changes in purple)

Overnight sponge dough
215g high protein flour
125g milk (cold)
2g instant yeast (1/2tsp)

Method
  1. Add all ingredients in a mixing bowl, combine all ingredients to a rough dough by hands , the dough is dry and rough and don't need to knead till pass window pane. Cover tightly with cling film and immediately store in the fridge for overnight (at least 12 hours).
Charcoal Burger Buns
1 quantity of above overnight sponge dough 
90g high protein flour
30g egg
1tsp instant yeast
1/2tsp salt
40g caster sugar
2tbsp milk (cold)
5g charcoal powder
45g butter

Method
  1. Tear the overnight sponge dough into pieces and add all ingredients except butter in a mixing bowl, knead till smooth dough.
  2.  Add in the butter and knead until dough is smooth and elastic. Cover with cling film and set aside to proof till double in size.
  3. Punch down the dough to expel air, equal divide the dough 7 portions,shape into round balls. Place dough on a baking pan. Let it proof for another 30-45mins.
  4. Bake in a pre-heated oven at 170C for 20-25mins. 

Homemade Charcoal Burger with Spicy Chicken and Egg
7 homemade charcoal burger buns
Green lettuce 
Tomato
Fried egg
cheese slices


To make Spicy chicken patties

Marinate
2 boneless chicken thigh, remove skin, cut into 5cm x 5cm thin pieces
3/4tsp fine salt
White pepper白胡椒粉

Flour mixture ingredients
150g plain flour 普通面粉
1/2tsp cumin powder 小茴香粉
1/2tsp Sweet Hungarian Paprika 红甜椒粉
1tsp Cayenne Pepper ground (Extra hot) 辣椒粉
1tsp garlic salt 蒜盐 (I used 1tsp chicken powder) 鸡精粉

Method
  1. Marinate chicken pieces with salt and white pepper for 30mins.
  2. Mix flour mixture ingredients in a large bowl. Set aside.
  3. When ready to cook, prepare a basin of clean water and a colander.
  4. Toss chicken pieces with flour and press firmly and hard on the chicken as to let more flour stick on chicken pieces.
  5. Place floured chicken pieces in the colander, put the colander in the water and immediately lift it up, remove excess water.
  6. Place wet chicken pieces back to the flour, again toss the chicken with flour and press firmly and hard on the chicken as to let more flour stick on chicken pieces。
  7. Heat enough cooking oil in a pot over medium high heat. Once oil is hot, reduce heat to medium, then put in the floured chicken pieces, deep fry for 3-5mins. Then increase heat to High, continue to deep fry for 1-2mins or until golden brown. 
  8. After frying, place chicken on a wire rack to remove excess oil. 

To assemble Charcoal Burger
Slice charcoal burger into half, roast the buns on a pan till crispy.
- Then assemble the buns with  green lettuce, tomato, spicy chicken patty, 
   fried egg and a piece of cheese. (See picture below)

  2. Ooo....beautiful looking burger. In fact looking at this burger, I think you can be on par now with the best burgers in town and no need to try out and wait long queue anymore. You can do this at home now. More healthier. Way to go Esther.
