Marble Pound Cake (大理石磅蛋糕)& Little Thumbs Up

Little Thumbs Up monthly theme for "Corn" has officially come to the end. Here, I wish to take this opportunity to thank you our organiser, Zoe and Mui Mui (Doreen) who invited me to join this event. A big thank to all the participants too who have shown me their support by submitting their posts to make this a successful event. For those who can't join me but still made their participation felt, I appreciate your unselfish comments. Because of YOU ALL, I enjoy cooking and baking so much so that it has became part of my life these days. In fact, looking at the seer numbers of entries received by my former host, and being a newbie in this blogging world, it came to my surprise to be able to receive 88 entries. With such an honor, it has given me more confidence to do better in the future. Coming of May I hope everyone can throw the same support behind the next host Joyce (Kitchen Flavours) on  "Mushroom" theme.

Today, I am going to share with you this classic marble pound cake. This is first time I bake pound cake without any baking powder or baking soda. Yet the cake still rise beautifully.

今天做了这个经典大理石磅蛋糕跟大家分享。这个磅蛋糕很棒, 无需添加任何发粉或苏打粉,依然能够漂亮成形。 不过,我的大理石花纹还有待进步 :)
Marble Pound Cake (大理石磅蛋糕) 
(Recipe adapted from Carol's cookbook)

Makes :  a loaf pan (8cm X 17cm X 6cm)


Ingredient:

A. Egg Yolk Mixture
  • 100g unsalted butter (cut into small cubes)
  • 20g sugar
  • 2 egg yolk
  • 100g low protein flour/cake flour
  • 10g unsweeted cocoa powder


B. Egg White Mixture
  • 2 egg white
  • 1/2 tsp lemon zest
  • 40g sugar
Method:
  1. Pre-heat oven at 160C.
  2. Beat unsalted butter and sugar with the electrical mixer until light and fluffy.
  3. Add in egg yolk at 4-5 batches, beat until combined after each addition.
  4. Add in sifted flour in 2 batches, combined well until no lumps. Set aside.
  5. Beat the eggs white, lemon zest and sugar until peak form. 
  6. Fold in 1/3 of  eggs white into the batter, then fold in remaining whites.
  7. Divide batter in half, gradually fold choclate mixture into one portion.
  8. Alternately spoon the plain and chocolate batter into loaf pan. Swirl with a knife.
  9. Bake for 45-50 minutes or until skewer come out clean.
