Corn, Prawn & Chicken Fritters (玉米富贵饼)

I like this comfort corn dish which happen to be my hubby favorite too. These fritters are sweet and crunchy  but soft inside. Very tempting and kids will definitely love it...
I apologize for my poor corn coating skill, which make the coating layer easily drop off during the steam and deep fried process. 

这也是一道我们家爱吃的菜肴。用清甜饱满的玉米颗粒包裹着鲜香的肉馅,外脆内软,吃后满口留香,回味无穷。对不起我这双笨拙的手,没能把玉米粒漂亮的裹成型, 加上又是蒸又是炸的,玉米粒也比较容易脱落,哈哈!家常小菜就是这样,没有太在乎外表,重要是好吃,请不要介意哦!在这里将这好吃的食谱介绍给你,希望你喜欢。
chicken and prawn paste
There are two versions for this recipe : steam and deep fry or just steam-only,
for steam-only version : extend your steam duration to 20-25 minutes.
Corn, Prawn & Chicken Fritters (玉米富贵饼)

Ingredients A:
200g boneless chicken thigh
100g prawn meat
1/2 tin whole corn kernel

Ingredients B:
Coriander root (chopped)
Black mushroom (diced)
Spring onion (chopped)
Cornflour

Seasoning:
Salt
Sesame oil
Chicken stock granules to taste

Method:
1. Mince chicken and prawn meat into paste. Add in ingredients B, seasoning and mix to form a 
    springy paste.
2. Divide the mixture into small portions and shape into balls. Coat well with corn kernel.
3. Steam for 5 minutes at high heat. Remove and leave to cool.
4. Nest up oil for deep-frying, put in chicken corn cakes and deep-fry for a while till light brown.
     Dish up and drain.

    It is very rare for me that "fried meatballs" coated with corn kernels. Usually it is either breadcrumbs or with bread cubes. But of course i love this for a change too because it is still full of goodies.
