Chocolate is one of the most popular Valentine's gifts. I would like to share a simple yet rich of chocolate fragrance pound cake with you. Hope that you will love it and bake it for your loved one. Bittersweet Chocolate Pound Cake (黑钻巧克力磅蛋糕）
(Recipe source : adapted from 新手也会做的磅蛋糕 Pound Cake Cookbook）
110g Unsalted butter (at room temperature)
115g Icing sugar
160g Cake flour or Low protein flour
1/4tsp Baking powder
60g Bittersweet chocolate
100g Whipping cream
- Preheat oven at 190c.
- Beat the butter and sifted icing sugar with electrical mixer until pale and fluffy.
- Add the eggs, one at a time, beating well after each addition.
- Add in the sifted cake flour and baking powder, mix until combined (don't over mix).
- Slowly add in the whipping cream and melted chocolate, mix until combined.
- Scrape the batter into the prepare pan (80% full) and smooth the top.
- Use vegetable peeler to shave the chocolate over the batter. (see picture below)
- Bake for 22-26 minutes.
