Christmas Cookies (巧克力豆杏仁曲奇餅) & Baking Class


Christmas is just around the corner. Finally, I got my last minute Christmas baking and
shopping done. Tomorrow will be a busy day for Christmas eve dinner preparation.

Yesterday I joined a Christmas baking class in Shah Alam.I learned how to bake Buche de Noel and Gingerman Cookies. I have lot of fun and sweet times with a lovely & experience
Japanese teacher and friendly students.




My first trial on Buche de Noel and Gingerman cookies :)




Chocolate Chip & Almond Cookies (巧克力豆杏仁曲奇餅)
(Recipe source : Bernices's Kitchen 和Carol (少许调整)

材料 :

  1. 筋面粉 170g
  2. 无盐奶油 80g (无鹽奶油放置到室溫的溫度(手壓有痕跡就好)
  3. 细砂糖 30g + 黑糖30g (我用黄砂糖 40g)
  4. 鸡蛋 1个
  5. 兰姆酒 1/2 大匙
  6. 盐 1/4 茶匙
  7. 水滴形巧克力豆 100g (我用水滴形巧克力豆 50g + 杏仁碎 50g) 
做法 :
  • 無鹽奶油用打蛋器打至乳霜狀態
  • 加入混合均勻的糖及鹽用打蛋器攪拌打發 (因為沒有添加泡打粉,所以奶油要打發才會有酥鬆的口感)
  • 將雞蛋及蘭姆酒分數次加入用打蛋器攪拌均勻
  • 再將過篩的粉類分2次加入用抹壓方式混合均勻(避免搓揉以免麵粉產生筋性影響口感)
  • 將攪拌好的麵團用手捏一小塊搓揉成圓球狀,間隔整齊的放入烤盤中
  • 用手將小麵團壓扁(約厚0.5cm)
  • 放入已經預熱到180度的烤箱中烘烤約 15-20分鐘
  • 烤好移出到鐵網架上放涼即可
  • 完全放涼放密封罐
